You will not use up all of the flour, bread crumbs, or oil so quantities above take waste into consideration when calculating calories.

Actual food quantities are as follows:
2 large chicken breasts
2 eggs
1/2 cup flour
1 cup Italian bread crumbs
Salt to taste
Pepper to taste
1 cup vegetable oil
1 cup shredded mozzarella cheese
1/4 cup fresh parmesan cheese
1 cup marinara sauce

PREP
-Pound chicken thin and flat in plastic bag or saran wrap
-Cut chicken breasts in half
-Season chicken with salt and pepper
-Season flour with salt and pepper
-Whisk eggs with salt, pepper, and 1 tbs water in separate bowl
-Place flour mixture, bread crumbs, and eggs in separate bowls
-Preheat oven to 400 degrees
-Pour 1/2 cup oil each in two separate frying pans and preheat until almost smoking, be careful not to scald oil and let actually smoke

COOK
-Dredge chicken breasts in flour, salt, pepper mixture
-Dunk chicken in eggs, thoroughly coat, drip off excess
-Dredge chicken in bread crumbs until thoroughly coated
-Place chicken in frying pan and fry each side for approximately 2 minutes or until golden brown
-Place chicken on baking sheet, top with marinara sauce, mozzerella and parmesan cheeses
-Bake approx 9-12 minutes, until chicken is 165 degrees or juices run clear
-Remove from oven and let rest for at least 2 minutes
-Serve with spaghetti, angel hair pasta, or anything else you like
