Directions:

put all ingredients except cheese and tortillas in a large dutch oven or pot. Bring to a boil, reduce heat and simmer for 45 minutes to and hour uncovered.

cut tortillas into thin strips and fry in oil until crispy.

place crispy tortilla in bottom of a soup bowl, tops with 1/4 cup shredded cheese. cover with 1 and 1/2 cups of soup.
