Preheat oven to 375ºF.

Heat the oil at medium-high heat in a large sauté pan and add onion and bell pepper, sautéing until tender.

Add celery, pimento and veg. broth and continue cooking until bubbling. Season with salt and pepper. Add in cooked brown rice and cheese and stir to mix, then spoon mixture into a small casserole dish and bake for 20 minutes.
