Easy Chicken Cordon Bleu

1  lb.		chicken breasts, pounded thin
4  pieces		of low sodium ham
1  cup		shredded swiss cheese
4  teaspoons		dijon mustard
1		Large Egg - Raw
2  cups		italian breadcrumbs
1  cup		Gold Medal White All Purpose Flour - Enriched, Bleached, Presifted
2  tablespoons		Natural Oils Extra Virgin Olive Oil

Preheat oven to 350 degrees. Pound chicken to even thickness. In center of slice of ham, place 1/4 cup swiss cheese. Fold ends in and roll up to form a pakcet. Place at narrow end of chicken and roll up and tuck in ends. Secure with toothpicks. In bowl, beat egg. Place flour on plate and breadcrumbs in a separate plate. Dip chicken in flour, then in egg, then into breadcrumbs. In pan, heat oil over medium heat. Place chicken in and brown on all sides. Place chicken into baking pan and bake for about 30-45 minutes or until done.
