Heat olive oil over medium heat in skillet. Add onion, garlic, celery and carrot. Cook 5 minutes, add mushrooms. Stir in tamari, black pepper and spinach. Let spinach wilt.

In sauce pan, bring 21/2 quarts water to boil. Add lasagna noodles. Cook to al dente and drain, rinsing with cold water.

Spread 1/2 cup tomato sauce on bottom of lasagna pan. Place a layer of lasagna noodles on top. Spread on 3/4 C cottage cheese and 1 1/2 cups mozzarella, 1/2 cup goat cheese and 1/3 vegetable mixture. repeat layers until you run out of ingredients. End with tomato sauce on top.

Bake for 35 minutes. Sprinkle with more mozzarella and return to oven for 5 minutes. Let sit for 20 minutes.
