1 Make slits in eggplant and roast in 400 degree oven for 20 minutes until soft.
2 Peel and mash eggplant
3 In a separate pan heat the oil in medium heat. Add onion, garlic, and other spices. Heat for a few minutes.
4 Add cut eggplant and tomatoes. Simmer in low heat for 10 or more minutes.
5 Serve hot with basmati rice
