Fajita Bowl with Rice

3  ounces		chicken raw
1/4  cup		red bell pepper slice
1/4		green bell pepper
1/4		yellow bell pepper
1/4  cup		onion
2  ounces		avocado
1/2  ounce		shredded cheese
1/2  cup		cooked white rice
2-1/2  ounces		Roma Tomato - Medium-Sized - Uncooked

prepare rice, that takes 20 minutes, while that's cooking:
slice meat and drizzle with hot sauce, set aside
clean and slice veggies
heat a large skillet to medium, when hot add chicken, turn after 1 minute
layer the veggies over the meat, cover and cook for 2 minutes
toss around, turn off heat, add tomatoes and cover, set for a minute to warm the tomatoes.
Put 1/2 cup of rice in a bowl, add the meat and veggies, sprinkle on the cheese, top with diced avocado. salt/pepper to taste.
