Favorite Vegetable Soup

1/4  cup		diced onion
2		garlic cloves,s minced
3/4  cup		thinly sliced zucchini
1/2  cup		thinly sliced carrot
1/2  cup		chopped seeded tomato
1  teaspoon		chopped fresh parsley
1/4  teaspoon		basil
1/8  teaspoon		pepper
2		Herb-Ox Special Dietary Instant Chicken Broth Mixes
2  slices		100% whole wheat reduced calorie bread
1-1/2  ounces		Cheddar cheese (Old)
2  teaspoons		miracle whip calorie-wise

In 1-1/2 quart nonstick saucepan, combine onion, broth mix and garlic; cook stirring occasionally until onion is transparent.
Add remaining ingrediants and stir to combine; cover and cook over low heat, stirring occasionaly, about 10 minutes.
Add 2 cups of water and bring to a boil
Reduce heat to medium, cover, and cook until vegetables are soft (about 20 minutes.
Using a slotted spoon, remove about 1/2 cup of the vegetables and set aside. Allow to cool a fewe minutes.
in blender container, in 2 batches, puree remaining soup, return pureed mixture to saucepan, add reserved vegetables and reheat.
Serve with bread buttered with miracle whip and sliced cheddar cheese
