Ingredients:  Makes 12 servings (12 slices)

Directions:

Mix 2 cups of the flour with the rest of the ingredients on med low speed for 3 minutes.

let stand 3 minutes

gradually mix in remaining flour- leave out up to 3/4 cup. Knead for 10 minutes.

cover with bowl & let rest for 20 min.
5 punch doen & shape into long loaf- place on cookie sheet. Cut diagonal slits in top of loaf & brush with water. Let rise 1 to 1-1/2 hours.
6.pre heat oven to

bring small pan of water to a boil. Place cookie sheet with bread on center rack & pan of boilng water on bottom of oven.

bake for 10min, then turn heat down to
350

bake an additional 15 minutes, then brush loaf with egg white mixed with water. turn oven off, & let bread stay in there for 5-10 min longer-(the egg white/ water makes the bread shiny & gives it a chewy crust)
