Directions:  
Heat oil in a large saucepan. Add leeks and zucchini. Cook briskly for 5 mins, stirring constantly.
Add garlic, tomatoes, tomato paste, bay leaf, stock and garbanoz beans. Bring to a boil and simmer for 15 mins.
Shred spinach finely, add to soup and cood for 2 minutes.
