Description: One and a half minute microwave-cooked bread/muffin/cake. Very light and moist. Eight serving MIX and instructions to cook (only!) one bread at a time. Variations are endless.

Ingredients:  Makes 8 servings (8 each)

Directions:  
1.) Make this 8-serving MIX in a plastic container- 1c. coconut flour, 4tsp. ground chia seeds, 1tsp baking soda (not powder), 3/4 tsp salt, Whisk, cover and shake, or sift these dry ingredients, to carefully mix in the soda and salt. (Optional: 4-8 packs of artificial sweetener or 2Tbsp sugar.)

2.) Spray bottom of plastic bowl (Ziploc 3c size) with non-stick spray. Set aside.

3.) In another small bowl: Beat one egg, add 2tsp lemon juice (OR 1tsp vinegar), beat in scant 1/4c water. 4.) Add 2Tbsp. MIX to the liquids and whisk for 15 seconds. Quickly pour into bowl you sprayed with non-stick spray.

4.) Microwave on high 1 1/2 minutes. Results/time vary in old or weak microwaves.

5.) Tip out onto hand then plate. Allow to cool 1-5 minutes before slicing with serrated knife. Or eat as a cake/muffin.

(Optional liquid sweeteners should go into liquids, of course.)
