Clean and wash chicken-remove skin.
Peel potatoes and quarter
Rub Chicken with lemons gently squeezing out juice and then rub in salt, pepper and thyme. Place the Lemons in the cavity of the chicken. You may add another Lemon if you like squeezing its juice on the inside.
Place potatos and chicken in a roasting pan and cook until inner most part of chicken is tender.
