Greek Chicken

2  lb.		boneless skinless chicken thighs
16  ounces		artichoke hearts
20		kalamata olives
20		spanish olives
10		garlic cloves
15  ounces		petite diced tomatoes
1/4  cup		extra virgin olive oil
1/8  cup		apple cider vineager
2  tablespoons		basalmic vineager
2  teaspoons		dried oregano

Pat chicken dry, and season with salt and pepper.
In a large bowl, mix all other ingredients except chicken.
Add chicken and mix thoroughly. Allow to marinate at least 4 hours, but preferably overnight.
preheat the oven to 450ºF
Cover with foil, and bake in the oven for 45-50 minutes, uncovering for the final 5-10 minutes, until juices from the chicken run clear when poked with a skewer/fork.
