Combine in mixing bowl; Red Wine Vinegar, Dijon Mustard, EVOO, Oregano, Salt and Garlic - Mix briskly with a wisk and set aside.

Combine; Cucumber, Tomatoes, Yellow Bell Pepper, Red Onion

Drizzle dressing over salad and toss to coat.

Refrigerate until ready to serve.

The longer this sits, the better it gets as the flavors meld together. I tend to eat this as a lunch with a piece of string cheese or sometimes serve as a side dish with a low carb dinner.
