Description: Braised small white onions in bacon fat
Ingredients:  Makes 4 servings (4 cups)

Bring water in a small pot to a boil, add small white onions simmer for minutes, remove onions and put in ice cold water for 5 minutes.

Cook bacon in a pan on medium low heat until cooked but not crisp about 6 minutes. Transfer bacon to a plate keeping 2 tbsp. of bacon fat in the pan. Put onions back in the pan and cooked on medium high heat for about 8 minutes turning them while cooking. Then add salt and pepper to taste and water scraping the bottom of the pan.

Lower fire, cover and let simmer for 15 minutes. Add peas and and let cook for 5 more minutes until peas are tender. Just before serving add bacon bits, butter and thyme.
Gives 4 portions of 150 calories each.
