Description: 2 portobello mushroom caps filled with grilled tomatoes and herbs, and mozzarella cheese.
Ingredients:  Makes 1 serving (1 each)

Prepare Grill.

Combine tomatoes, mozzarella, 1/2 teaspoon of the olive oil, rosemary, pepper and garlic in a bowl.

Mix 1/2 teaspoon of the olive oil, lemon juice, and soy sauce in a bowl. Spread mixture over both sides of the mushroom caps.

Scoop out the cap innards. Grill caps 5 min on each side.

Spoon equal portions of the tomato mixture into each cap, cover, and grill for 3 minutes or until cheese has melted.

Serve hot.

Garnish with Cilantro if you like.
