Cut up chicken and place in large stewing pot, add diced carrots, onion and celery. Stew till chicken falls off bone. Remove bones from stew shred chicken meat and remove skin. Add herbs and salt and pepper. Peel acorn squash, remove seeds, dice and add to stew. Add rice simmer and stew until rice and squash are tender. Serves 24.
