Homemade Mayonnaise

1		egg
1		juice from 1 lime
1-1/4  cups		light tasting olive oil
1  tablespoon		rice vinegar
1/2  teaspoon		sea salt

put egg, lime juice, and 1/4 cup of olive oil in wide mouth jar.
Using a stick blender put all the way down in the jar - blend for 30 seconds
Add remaining olive oil in a VERY THIN STREAM while blender is running.
When all of the oil has been added, raise blender and mix towards the top.
Add rice vinegar and mix with a spoon.

Mayo is good refrigerated for one week - or the date on the egg carton.
