Wash all veggies. Cut veggies ends & pieces to use for stock. Boil in 2 cups water. Use onion celery broccoli cauliflower ends to make wonderful home made Veggie stock.
While stock is boiling for about 30 minutes, prepare as follows.

Cut up to 5 cups veggies to your desired size lager will be more crisp. Do onion celery pepper can be smaller as they are used in next step.

Heat oil in large skillet on med high, add Italian seasoning , reduce to medium heat.

Add celery, pepper, onion, 1-2 cloves garlic. simmer just a few minutes till all is coated and flavor is blended/married together

Strain stock, add 4 more cups of water , and then chicken bullion. Bullion can be added to your taste.

Add firmer veggies first, carrots ect boil 5 minutes. reduce heat and add other veggies, simmer for 20 minutes on low. Less time if you would like veggies crisp or will be re-heating later.

Now add olive oil and onions to the soup.
