Directions:

Gently saute lentils in olive oil, stirring constantly. Add chopped vegetables one at a time, stirring for approx 1 minute before adding the next.

Add soy sauce, basil and oregao (and salt to taste), cook approx 5 minutes on medium-low heat, stirring occassionally.

Add water and simmer for 1 hour.

Add fresh mixed herbs prior to serving.
