Directions:

Sear cubes of beef steak in olive oil until browned all over, and remove from pot.

Add diced vegetables (except spinach) and saute for a minute or two.

Add lentils, water and boullion cubes.

Add spices to your taste (thyme, curry powder, cumin is what I added) and salt.

Bring to a boil and reduce to simmer, cook with a tight fitting lid for 1.5 hours or until steak is very tender. Season with pepper when soup is done. Add spinach to finished soup and let it wilt into the soup.

Cook quinoa seperately, dress with butter and serve soup on top of quinoa.
