Loaded "Potato" Soup

8  ounces		yukon potato
1		small head of cauliflower
2  cups		2% milk
1  cup		med chopped onion
10  slices		chopped cooked bacon
1		salt and pepper to taste
4  cups		Campbell's Chicken broth fat free 25% less salt
1/2  cup		Half & Half Cream
1  cup		mild shredded fat free cheddar cheese (price Chopper)

In large soup pot boil cauliflower florets and peel potato until tender.
Saute onion until translucent in pan sprayed lightly with oil and set aside
Pour water with veggies thru strainer and set aside.
In, now empty soup , add chicken stock ,boiled cauliflower , potato and S&P to taste and bring to a simmer.
Take immersion blender and blend to desired consistency.
Add chopped cooked bacon.
Simmer for 10 min.
Serve topped with shredded cheddar cheese.
