Description: This is made from pre-cooked (left over) salmon. I used "Cedar Bay Planked Salmon- Sugar and Spice" You can substitute any kind but the nutrients will turn out to be different. Recipe makes 2 cakes- a serving is one cake.

Break up crackers. I put them in a sealed plastic bag with air taken out, and lightly pound with either a meat tenderizer or a mallet.

Weigh your cooked salmon and break into small pieces.

Beat your eggs

Add cooked salmon, eggs and diced onion to a mixing bowl and mix well.

Add crackers and mix well.

Shape into two patties. In a skillet over medium heat, heat an oil of your choice (about a tablespoon or two) and fry each patty for about 5 minutes or until crispy and golden brown.
