Directions:  
Cut 6 pieces of foil into 10-inch squares. Brush squares lightly with olive oil. Make 3 interval slices into each chicken breast. Then, slice mozzarella cheese and place between cuts in the chicken. Divide up the zucchini and tomatoes between the foils and season with pepper, oregano, and basil to taste. Place the chicken on top of each vegetable pile, then wrap to enclose, tucking in the ends. Place the foil packets on a baking sheet. Bake in a preheated oven at 400 degrees for 30 minutes. Unwrap each packet and serve with rice or pasta.
