Ingredients:  Makes 8 servings (8 bowls)
 
1  cup
 
2  tablespoons
 
1/8  cup
 
1/2  cup
 
1/8  teaspoon
 
1  dash
 
1  teaspoon
 
1/2  teaspoon
 
1/4  cup

Directions:

Boil chicken breasts for 30-35 minutes & cut into small cubes when cooked.

Dice onion and peel potatoes and cut into small cubes

In separate pan add oil and fry rice until begins to brown

Add onion and saute with rice for a few minutes

Add spices and stir

Combine fried rice with cooked chicken in chicken broth
7
Add uncooked cubed potatoes
8
Add can of diced tomatoes and 1/2 - 1 can of tomato sauce for added color & flavor.
