Description: Everyone has their own way to make Mexican Rice. If you have any left over peas or diced carrots, you can add them with the onions and garlic.
Ingredients:  Makes 3 servings (3 cups)

Directions:  
Place rice in sieve and rinse under water to wash out starches. Set aside to dry. Dice up onion and garlic. Heat pan under medium and add oil. Add rice and lightly brown, lower heat if necessary. Once browned, take off heat and let it cool off. Add chicken broth and vegetable juice until desired color of rice is met. Add onions and garlice. Bring to boil, cover and simmer until broth is almost absorbed--turn off and let stand.
