Nest of Beans and Greens

1  cup		dried Lima Beans
2		hard-boiled Eggs, finelies chopped
3  tablespoons		TBS Extra Virgin Olive Oil
2  lb.		bunch of Turnip, Collard, or Mustard Greens or 1 (6-ounce) package frozen greens
1		Juice of 1 Lemon
1/2  teaspoon		Salt, Pepper, Vinegar, and crushed Pepper Flakes to taste.

Soak and cook lima beans according to the directions on th package. Drain. Add the eggs to the beans and use a potato masher to mash into a paste. Use the olive oil sparingly if some moisture is needed. Set aside. Saute the greens in a medium saucepan until tender but still green. Make a nest of greens on each plate. Put 2 TBS of the lima bean mash in the center. Sprinkle lemon juice and season as desired with salt, pepper, vinegar, and red papper flakes. makes 4 servings.
