Description: My wife's recipe for pie crust. Very flavorful, light and flaky.

Directions:

Put butter in a bowl. Boil water, add to butter and mix well. Add salt and mix.

Reserve 1/4 cup of flour and add remaining to bowl and mix until it forms a ball. Dough should be soft and easy to work. If too sticky add reserved flour until no longer sticky.

Roll 1/2 dough between waxed paper until large enough to cover pie pan with some overlap. Repeat with remaining dough. Form into pan.

For single crust pies, prick bottom and sides with fork. Bake in preheated 350 deg. oven for 15-20 minutes or until lightly browned.

For double crust pies, cover edges of pie with foil, cook filled crusts at 350 deg for 55-65 minutes. Remove foil after half the baking time.
