Directions:  
Preheat oven to 450 degrees. Scrub potatoes under warm water with a vegetable brush to clean skins. Cut into wedges and place in a large bowl. Add olive oil and salt and toss until each wedge is coated with oil. Put onto a vented cookie or pizza sheet and bake for 15 mins. Check and turn if necessary, cook for a further 5 - 10 mins as required. Lower heat to 425 if necessary. Enjoy.
