Oven-baked eggs & Mushrooms

3  tablespoons		butter
3  cups		sliced mushrooms
1/2  cup		chopped green onion
4  slices		old cheddar cheese
6		eggs
1/4  teaspoon		salt
1  pinch		pepper
1/2  cup		light cream

Heat 2 tbsp butter in skillet, and saute' mushrooms and onion briefly. Grease 8" x 8" glass pan. Sprinkle half the cheese over the bottom. Make 6 'wells' in the cheese and break 1 egg into each. Sprinkle with salt and pepper. Cover with mushrooms & onion mixture. Sprinkle remaining cheese over top. Pour cream over . Dot with pieces of remaining 1 tbsp butter. Bake in 350º oven for about 20 minutes, or until eggs are set. Serve over hot toast or English muffins.
