Description: This is a home-cooking style Japanese dish; a donburi is always served over rice, and the name means 'mother and child' (Oya is mother, Ko is child, i.e., chicken and egg.) It's very tasty and simple to make.

Rinse and set your rice to cook (18 minutes is the usual time, with twice as much water as there is of rice.)

Mix all liquid ingredients with sugar in a very small pan and bring to a boil; add the onion, turn down heat to medium and cook 1-2 minutes until limp.

Add the chicken and stir; cook until done.

Pour the beaten egg into the pan over the chicken and onions and lid the pan; cook for 30 seconds to 1 minute and remove from heat.

Put cooked rice into a bowl and slide the chicken mixture out onto the rice; garnish with sliced green onions if you like them.
