Directions:  
Remove all the rough stems from the kale and chop into bite sized pieces
chop onion into thin slices
shred carrot
mince garlic
Pre-heat pan to med-high heat with olive oil and add garlic. cook for about 15 seconds then add onion. cook onion for about 5 minutes until soft. Add the kale, beans, tomatoes, and carrot along with 1/4 cup of water. Cover with a lid and cook until kale begins to wilt.
season pork chops with salt and pepper
Preheat skillet with 2 tbsp of olive oil. Add pork chops and cook until browned on both sides. Time will vary depending on the thickness of chop.
Serve with vegetables
