In a medium bowl, mix the almond meal with the spices.

Coat each chunk of chicken as follows: Toss in the almond meal mixture, then dip in the egg, then back into the almond meal, this time pressing the “bread crumbs” into all sides of the chicken. Set aside the chicken as you finish each piece on a plate.

In a saute pan over medium-high temp, heat the coconut oil and pan fry the pieces, just until golden brown and slightly crispy on each side.

Place all the pieces on a baking sheet and finish in the oven, baking for about 10 minutes.
