Directions:

Cut the pork into slices slightly thinner than 1/4 in, flattening the meat while you cut it.

Spray meat with olive oil or place in a bowl and drizzle 1 Tbsp olive oil over meat and stir to coat. Season with salt and pepper.

Finely chop the capers and garlic.

Zest lemon rind, then cut lemon into slices about 1/4 in thick.

Heat a medium to large skillet over medium-high heat until it is very hot.

Add half the pork slices and cook until browned, about 2 minutes.

Turn meat over and brown other side.

Remove pork from skillet to a serving dish and repeat steps 6 - 8 with remaining pork.

Reduce the heat to medium. Add 2 Tbsp olive oil and swirl to coat pan.

Add the lemon zest, capers, garlic and lemon slices.

Cook undisturbed for about 1 minute; then pour sauce over pork and serve.
