chop linguica, onion and spinach.

coat non-stick pan with 1/2 tsp extra virgin olive oil

saute linguica, onion until onions are translucent

pour off any excess fat

add spinach

while the above is cooking beat eggs, salt and pepper and milk together

pour egg mixture over linguica, onions, and spinach. cook and let bottom set same as for an omelet.

sprinkle cheese to distribute throughout the mixture.

remove from stove top and place in oven

cook until eggs have risen, and a toothpick in the center comes out clean (dry)
