preheat oven to 350 degrees F

Heat olive oil in a large Dutch oven over medium-high heat.

season the chuck roast with salt and pepper.

put the chuck roast in the pan and cook both sides until brown.

remove roast from pan

add onion and saute until tender

return the roast to the pan and simmer with the red wine, thyme sprigs, chopped garlic, beef broth, and bay leaf

cover and bake for 1 1/2 hours at 350 degrees F

add carrots and potatoes and cover and bake for another hour

remove thyme and bayleaf and shred meat
