Prepare rice and begin microwaving.

Heat chicken stock in skillet until steaming.

Put carrots in stock, cover for 2 minutes.

Add peppers, stir, cover for 1 minute.

Add onions and summer squash, stir, cover for 1 minute.

Turn off burner. Add teriyaki sauce, stir.

Portion rice onto plates, spoon stir fry and sauce onto rice.
