Rice Pasta and Spinach with Sun Dried Tomatoes

16  ounces		Tinkyada Brown Rice Past Shells
2  tablespoons		extra virgin olive oil
20  ounces		fresh spinach
8-1/2  ounces		of sun dried tomatoes
2  fl. oz.		Oscar Mayer Turkey Smoked Sausage
7  tablespoons		Shredded Parmesan
7  tablespoons		Feta cheese

Bring to a boil 4 quarts of water. Add 1 T salt (optional) and pasta. Stir occasionally and cook for 14 to 16 minutes, to desired tenderness. Rinse with cold water and drain well. To a large pot add and heat olive oil. Add spinach and cover. Stir occasionally, until spinach wilts. Add tomatoes and sliced sausage. Cook another 5 minutes or until sausage is hot. Serve with a tablespoon each of the two cheeses.
