Description: Better than tuna salad. Perfect for leftover cooked salmon. A perfect second life for last night's over cooked grilled salmon. Also delicious as a craker spread for parties.
Ingredients:  Makes 6 servings (4-0/1 cups)

Directions:  
shred salmon as desired, set aside in a large mixing bowl.
Chop onions and celery set aside.
Place feta lemon juice and mayo and seasonings in food processor, process till feta pieces blend in smoothly.
Remove mayo-feta mixture and pour over salmon. Mix lightly.
Add the capers, sun dried tomatoes, and chopped celery and sun dried tomatoes. Mix well.
Serve over salad greens, on toasted wheat bread or crackers.
