Mash Tofu with a fork and add soy sauce and seasoning mix. In a skillet, heat oil and sauté onions for a few minutes, or until onions are clear. Add tofu mixture and cook for 8-10 minutes, stirring often, adding more oil if tofu starts to stick. Right before serving, add spinach and stir until in wilts and add salt and pepper to taste.
