Description: Thanksgiving Turkey roasted over night

Directions:

take out giblets and wash bird

rub salt, pepper and ground sage inside and butter on the outside

Put bird in roaster and fill 1/2 way up the bird with water

cover pan with heavy duty foil. Make tent over bird and seal edges. Put on lid (won't fit tight)

put in pre-heated 400 oven and cook for 2 hours

turn oven down to 225 and cook over night...an additional 10 hours (plus or minus an hour)

take bird out of roaster and let rest at least an hour before carving. (cover with foil and towel to keep heat in.)

use broth for dressing and gravy
