Add oil to a large non-stick skillet over medium heat.
Dice baked potato, chop onion, tomato, pimento, parsley and garlic. Add to heated pan.
Cook for 5-7 minutes, or until tender, stirring so not to stick.
Stir in wisked eggs.
As eggs begin to cook, gently lift sides of omelet and tilt pan to allow the uncooked egg to flow underneath.
Cook until eggs are set but still moist.
