Description: Roasted pork tenderloin with apple cinnamon sauce.
Ingredients:  Makes 1 serving

Preheat oven to 375°F.

Combine jelly, lemon juice and spices in a bowl and blend well.

Place tenderloin on a rack that has been sprayed with cooking spray and place in a shallow baking dish.

Brush tenderloin with half the apple jelly mixture. Roast 20 to 30 minutes per pound, or until a meat thermometer registers 155°F.

Let stand 5 to 10 minutes.

Clean and core apples. Slice into thin rings. Place apple slices on broiler pan and brush with remaining apple jelly mixture.

Broil about 5 minutes or until apple slices are tender, about 6 inches from heat source.

Slice tenderloin and serve with cooked apple slices.
