Description: Asian style roast replacement for duck with hoisin and pancakes or serve with greens/noodle
Ingredients:  Makes 9 servings (27 each)

Directions:  
Preheat oven to 240C gas mark 9
Score pork rind every 1cm without reaching meat
Place in a deep roasting tray.
Rub pork with half the salt, the pepper and oil. Sprinkle over remaining salt.
Roast for 20 minutes or til skin cracked
Reduce temperature to 180C gas mark 4
add remaining ingredients to tray and roast a further 1 hour 40(for 2kg)- 2 hours depending on weight

slice and serve (3 thin slices each)
