Ingredients:  Makes 3 servings (7-1/2 cups)

Buy spice packet from Indian grocer, follow directions on box, which are:

Pour spice packet into yogurt, mix

Cut chicken into small pieces

Put chicken into yogurt, mix to coat

Place mixture in refrigerator to marinate for at least 1/2 hour

Dice tomato

Boil tomato with enough water to cover

Put through sieve, discard seeds and skin, put aside

Cut onion and boil

Puree onion

Put rice up (boil 1 cup water and 1 tsp butter/margarine, add 1 cup rice, reduce heat, cover. Do not stir.)
Heat pan with grapeseed oil on high

Pour chicken and yogurt into pan, cook for 5 minutes, stirring frequently

Add tomato puree and onion puree

Lower heat, cover, cook for 15 minutes

Melt butter

Check rice

Add melted butter and coconut milk when rice looks done

Optional - add fresh cut coriander/flat leaf parsley
