Cut cucumbers in half lengthwise and slice thinly

Place cucumber slices in a colander and sprinkle with salt. Toss well and let sit for 45 minutes.
Note: Salting the cucumbers will draw moisture out of them, making them crispier

Place cucumbers on several layers of paper towels and cover with additional paper towels. Let stand for 5 minutes, pressing down occasionally. Rinse and pat dry to pick up any excess salt that the cucumbers did not absorb.

In a small saucepan, combine vinegar, water, sugar and pepper, bringing the mixture to a boil. Reduce heat and cook until mixture has been reduced to 1/3 cup (this will take about 10 minutes)

Remove vinegar mixture from heat, let cool and stir in onion

Combine cucumbers and vinegar reduction in a medium bowl. toss well and sprinkle with peanuts
