Preheat a grill pan on medium high. Season both sides of the steak with salt and pepper, and cook it about 6 minutes on each side. Remove the steak, let it rest for 3 to 5 minutes, and then slice it diagonally across the grain into thin strips. Cut the tomatoes into eighths. In a large bowl, mix the tomatoes, onion, and garlic. Add the meat and lettuce, pour on the vinaigrette, and toss well to completely coat everything. Top with the cheese.
