Description: Bell peppers stuffed with ground chicken, brown rice, diced tomatoes and shredded cheese
Ingredients:  Makes 8 servings (4 each)

steam bell peppers

heat oil in oven proof pan

saute chopped onions

saute ground chicken until no pink

add diced tomatoes

add Worcestershire sauce and stir

add rice

add water

cover and simmer on low for 40 minutes until rice is done

preheat oven to 350 degrees

When rice is done, add cheese and mix well

cut each bell pepper in half

move chicken mixture around in pan and fill each half of bell pepper with chicken mixture

put 1/2 slice of Cheddar cheese on each pepper

Bake in oven for 20 minutes until cheese melts and peppers are bubbling
