Beat Egg, add first 7 ingredients reserving 3/4 of the Mozz. Cheese and tbsp of Parm cheese for last. If using fresh parsley, add last b/c over mixing it will turn cheese mixture neon green
Place mixture in ziploc bag and seal. Cut hole in the end corner of bag. Squeeze mixture into al dente cooked manicotti shells.
3)Spread small amount of sauce on bottom of baking dish. Arrange stuffed shells on top of sauce. Pour remaining sauce on top of shells. Sprinkle with remaining mozz cheese and parm cheese.
Bake in oven at 375 for about 35 minutes or until top is nice and bubbly golden brown.
