Bake 1/2 of a sweet potato until soft (about 25 min). Bake chicken breast at the same time in a 350 degree oven (about 25 min.) and shred when cooled. Chop apple, pear, scallions and nuts.

Place the baked potato on a work surface. Scoop out the insides in chunks and place in a bowl.

Coat a nonstick pan with vegetable oil spray, sauté apples and pears for 8-10 minutes, until tender. Add scallions, cranberries, allspice, pepper, cooked chicken, sweet potato chunks and salt. Stir to mix well and heat through.

Fill the potato skin with heated mixture. Drizzle with honey and sprinkle with walnuts.
Enjoy for lunch or dinner on Phase 1 or 2.
